Meal Plan No. 8

I am going on week two of not being pregnant and I’m happy to find that I can stomach some of the foods that I like but didn’t want to eat when I was pregnant. This makes me super happy because the rest of my family are red meat eaters and now I can cook it again without getting sick feeling. I made some super delicious chicken and vegetable soup in the Instant Pot and will be having it again tonight! Getting an Instant Pot was the best thing that happened to me.

This is what we are eating this week.

Sunday: Chicken and vegetable soup
Monday: Popcorn shrimp, potatoes, corn
Tuesday: Spaghetti
Wednesday: Leftovers
Thursday: Gumbo
Friday: Dinner with family
Saturday: Pizza

Meal Plan No. 7

This is my first week with three babies so everything about my plan will probably change. I actually have several instant pot freezer meals ready to go and I anticipate having a meal or two with my parents. Hopefully everything will have lots of veggies and protein because well, breastfeeding lol.

Tuesday: Stuffed bell pepper boats

Meal Plan No. 6

It is supposed to be cold all week so my menu consists of comforting, warm meals and my favorite soup! The first time I made black eyes pea soup with sausage and collard greens was last year for our New Years Day meal. After that, I was hooked and I made it at least once a week for the next two months. I’m so excited to be making it again this week for the first time this season! A bonus is my kids love it too!

Heres what we’re eating this week:

Monday: Black eyed pea and sausage soup

Tuesday: White chicken and company potatoes

Meal Plan No. 5

The beginning of this week has been a little scattered and I never sat down to start a meal plan. My goal for the past few weeks has been to use up and cook what I’ve been stocking up in my freezer. One, because I don’t have much room left to put other stuff in there but mainly because my grocery budget has gotten out of hand the past couple of months and I didn’t want to continue spending that way. Most of what we are eating has required minimal effort on my part because 35 weeks pregnant over here! In this week and next, we will have successfully eaten pretty much all I’ve had stocked in the freezer and I’m so glad!

Here is my meal plan for this week:

Sunday: Sandwiches

Monday: Pizza

Tuesday: Breakfast for dinner.

Wednesday: Shrimp alfredo

Thursday: Eating out

Friday: Dinner with family

Meal Plan No. 4

I can’t believe I have kept up consecutively blogging for four weeks now! I’m so proud of myself lol. When I first started out, my goal was to post 2-3 times a week. Although I wish it had been 3 times a week, I am a procrastinator so I just haven’t typed up some of the posts I’ve already written for myself.

My meal plan for this week is probably going to fluctuate a lot as it almost always does when Kevin is home from work, but that’s okay because I still find it comforting to still have something planned. This is what we’re eating this week:

Sunday: Bagel bites

Monday: Gumbo

Tuesday: Pizza

Wednesday: Leftovers

Thursday: Shrimp pasta

Friday: Dinner with family

Saturday: Spaghetti

Meal Plan No. 3

This week is going to be a busy week with Thanksgiving coming up on Thursday but I do have all my meals planned out! Even though I don’t always eat exactly what I have planned, it’s soooo nice to have a plan beforehand so I don’t have to try to decide at 5 pm what to feed my family. There’s one thing I’ve been thinking of lately and it is how tiring it is to get three plates ready at the same time and sit down to eat with everybody. That makes it sound like we have a lot of people eating with us. It’s pretty much just me, Kevin and the kids. But still! The kids are not old enough to fix their own drinks or get their own silverware yet so I’m doing a lot at dinner time.

Tuesday: Teriyaki chicken, company potatoes (my fave!)

Meal Plan No. 2

It was my plan to post my meal plans on Sunday, buuuuut I actually do my meal plan on Sunday usually and then I just put off posting it. Maybe in the future I can post on Sundays but I think for now I’ll just post on Mondays. This past week I started really craving some yummy comfort food and in the past two days my meal plan has changed about five times. I think a lot of it is because whatever we end up having on Sunday evening tends to set the tone for the rest of the week.

I am trying a new recipe this week, I actually had it on last week’s meal plan but we ended up going out to eat instead.  So now I still have that meal for this week and that makes me happy! I really hope it tastes good.  One of the things I’m trying to do this past week and this coming week is to use up all the food I have stored in my cabinets and freezer.  About two months ago, I was able to buy some meat more in bulk and then freeze it so I’ve got a good bit of that left because well, I’ve been pregnant and it’s been hard to cook some (most) nights.

Meal Plan No. 1

I love meal planning.  I have a written meal plan for our suppers almost every week.  I started meal planning in 2016 as a way to keep our food budget low and under control.  Once I started having a plan every week for what I was going to cook at night, I got to where I couldn’t decide what to cook if I didn’t have it already written out.  Which is kind of funny because we pretty much eat the same rotations of meals that I generally already have the ingredients for.

Despite eating mostly the same meals every week or so, I can still draw a blank while I’m coming up with a meal plan.  I think part of this is because every time I sit down to write out my plan, I do have the thought, “what if I don’t want to eat/cook what is on my plan for the night?”  I like to have flexibility in what I get to cook or what we eat.  But that’s the best thing about being the mom and the grownup.  It’s my plan.  I get to change it if I want!  I can switch around meals as I want or I can just put off the meal for the next week.

I’ve been thinking about the benefits of compiling a master list of the meals I make so I can just look at my list and pull ideas from it.  I haven’t started on this yet, I just think it would be a good idea to do. One of my favorite organizing tools to use is index cards so I want to incorporate those somehow.

The weather is finally getting cooler and that makes me feel more like using my instant pot to make soups and gumbo and chili!  These are my favorite things to make for a Sunday evening because I can get them started before we leave for evening church so dinner is ready when we get home.
